The way in which a ‘living juicer’ works, is that it gently crushes all types of produce, thereby breaking open the cellulose wall and releasing the nutrients. Conventional centrifugal (fast spinning) juicers work on grating the produce at a high speed and flinging out the juice. Unfortunately, the massive amounts of air drawn into the juicer, causes oxidation which immediately begins to break down the nutrients, including most importantly the enzymes within the fruit and vegetables.
